I just adore Ina Garten also known as the Barefoot Contessa. Years ago I was trying to figure out what to do with some lox and I googled: salmon dill dip. The recipe was Ina’s and it was the best spread I’d ever made. Now a-days I love thumbing through her recipe books and watching Barefoot Contessa on the Food Network.
I find her story fascinating. A nuclear analyst for Nixon’s White House makes an offer on the specialty food store, Barefoot Contessa, in the Hamptons. And gets it!
I like her demeanor, what she cooks, how she explains it to you. And I especially adore how she dotes on Jeffrey. How obviously in love they are. And how appreciative Jeffrey is of what she cooks and how giddy she is because of that appreciation. Not only does it remind me of our house, it’s what I was always looking for. ♥︎
Harris Teeter
This week we tried Auntie Ina’s Mustard Fish and I shopped at Harris Teeter like usual. I paired the Mustard Fish with haricots verts (French green beans) and redskin mashed potatoes that were already prepared at Harris Teeter.
I thought I had two unfortunate glitches at Harris Teeter but both ended up being ok. The store was out of Creme Fraiche. So I hit the google for a substitute and ended up using a sour cream and heavy cream mix.
Also, the fishmonger I had wasn’t the best the other day — I recommend Keith if you can get him.
I really wanted a fresh fish but she didn’t know what would be comparable to red snapper or cod so she kept pointing me to the frozen cod. After having gotten all of my groceries in the cart except for the fish I wasn’t going to switch up recipes at that point so I bought the cod.
It was really good. And given that the pantry ingredients for Mustard Fish are almost always in the house it’s nice to have a few pieces of fish in the freezer.
Still and all, Mustard Fish makes a great weeknight supper for two. It’s very flavorful and super easy.
Here’s a link to Ina’s recipe, plus the video on how she makes it. It serves four. I didn’t cut it in half. After going through the effort of the shopping I cooked the whole thing and ate the rest for lunch leftovers.
Ina Garten’s Mustard Roasted Fish — a super flavorful and easy weeknight dinner.
